Simply tag the mp3 file's "Genre" tag as "podcast" which will enable resume on them through the zune player.

I think there are a couple other keys to making this work properly. First, make sure the physical files are in a folder that the Zune software is monitoring for Podcasts. If the folder is not monitored for podcasts, they'll show up on the music section.
Second, I think you may have to remove existing files from the library if they're listed in the music section but with a genre of 'podcast'. Then, re-add the files to the library. They should show up in the podcasts section if this is done right.
This makes for a better solution for audiobooks, but it's still lacking in a couple key areas: 1. The granularity of sync'ing options is limited. 2. The order in which the files play back is not easily controlled.
Hopefully when we get real audio book support (with the next release if rumors are to be believed), audio books will be a first class citizen in the zune world.
